Thriving restaurants are places where the food is excellent; the service is superior, and the prices are worth it. Keeping a great restaurant on the top of gourmands' list of the best is pretty much a full-time job. Operators and owners are already cooking on all four burners if you'll excuse the pun. So, why would they consider adding another job to their very full plate?
But this idea is being considered by many top restaurateurs and executives, and it seems to be making a sense to many in the industry. The proposal is to add catering as a side gig.
